Ingredients
1 very ripe banana, smashed
2 large eggs, beaten
1 teaspoon cinnamon (optional)
2 tablespoons of coconut oil
1/4 teaspoon vanilla extract (optional)
Directions
- Mix smashed banana and beaten eggs in a bowl. Add cinnamon and vanilla (optional).
- Heat coconut oil in a pan.
- Scoop 1/4 cup of banana batter and cook evenly on both sides until slightly golden.
- Serve with all your favorite toppings.
