An easy organic recipe the whole family can enjoy! Easy to make, great for leftovers, and a refreshing dish for the summer.

Ingredients

1 cup drained and washed chickpea

1 large tomato, diced

1 yellow onion, chopped

1/4 red onion, chopped

1/4 cup of feta

1 cucumber, cut in slices

1 teaspoon of chopped ginger

1 teaspoon oregano

1 small handful of chopped parsley

1 teaspoon olive oil

Salt and pepper to taste

Directions

Throw all ingredients into the dish and it is ready to serve!

    I tried the Mediterranean Chickpea Salad with a bit of a skeptic heart, but was very pleasantly surprised at how delicious it was! Very light and refreshing. I can eat this with confidence that I am eating well. Why the skepticism? I generally am not a cucumber or feta cheese fan, but mixed together, it was great!
